Is it better to cook a UMM or leave it uncooked as it relates to server and player load times?

Well!!! It might not make a difference as far as loading goes, but it's better to stay with an un-cooked file size permitting. And the reason for that is...Patches. Every time a large patch is released if you have cooked version you'll need to update your map where is with uncooked version you don't have to worry about that.

yep thats true.. unless they change any of the core packages, i now have soldiers without helmets on my shoothouse! thanks to the change of uniforms, it took me a while to notice them missing

cooking lowers the filesize a bit and keeps the map safe from being copied. but as wolvie said you gotta keep them updated everytime a new release drops, no matter if its a small patch or RFI- New Content.

So here's a question. Steam has a workshop limit oh total kb's. In this case isn't cooked better as it reduces file size?

Yes.

Another advantage of the smaller size is that the first time map is played(Downloaded) it will take less time.

As mentioned before by Wolvie, the main disadvantage of cooking is that every time AAPG updates, you will have to re release(cook) the map.
